Chocolate Peanut Butter Banana Ice Cream

Mmm… ice cream. Who doesn’t love it? Ice cream can be soothing on a hot summer day, a treat for your birthday, or an after dinner dessert. And it comes in a billion flavors so surely you have one that you love, right?

Being on a whole-food plant-based diet does not mean that you can’t have ice cream. It does mean that you should limit the variety found in the stores (even the non-dairy brands) since they are full of sugar and we know how sugar can affect our bodies and our moods (3pm sugar crash anyone? Hyperactive children after they have candy?)

Here's the good news-- you can still have ice cream! You'll have to make it yourself, but I promise that you need no fancy equipment for this and it's only one ingredient that you might even already have lying around at home!

Let's talk about bananas. Bananas are full of nutrition. They are often used as post-workout snacks to help protect against muscle cramps. Bananas are high in potassium, which can help to lower blood pressure and to remain alert. Bananas act as a prebiotic and stimulate healthy gut bacteria and can also help to ease the symptoms of PMS. Bananas are also a blood-sugar regulating fruit. Even though they are sweet, they work to even off the blood sugar in your body, which could help with blood sugar issues related to diabetes. Now on to the recipe. Here’s my favorite variation, but the possibilities are endless. Play with flavors like berries, coconut, and cinnamon. You could add espresso or mint (or both!?) You might even just like the plain banana flavor with no additional add-ins! There really are a million ideas, but here’s one to get you started.

 

Chocolate Peanut Butter Banana Ice Cream
Serves 2

Ingredients:

2 bananas, sliced and frozen
2 TBSP raw cacao powder
2 TBSP natural (no sugar added) peanut butter
½-1 tsp vanilla
2 TBSP cacao nibs (optional, but add texture)

Directions:

Place frozen bananas in a food processor and process. This takes a few minutes. You’ll see the bananas go from frozen chunks to something chunky looking to a massive ball of banana to smooth. I let my food processor go for at least 5 minutes to get the right texture.

After you get your bananas the texture of soft serve ice cream, add in your raw cacao powder, peanut butter and vanilla and process another 1-2 minutes.

Transfer to freezer-safe container and stir in cacao nibs, if using. Cover and place in freezer for at least 2 hours before serving.
