Vegan Cheezy Lime Popcorn

Recently, I went out to dinner with a friend and when I arrived she had ordered an appetizer for us: some kind of cheezy, lime popcorn. The stuff was amazing and I left determined to replicate it at home. (Partly because it was delicious and partly because spending $8 for a cup of popcorn seems a little ridiculous when you can make a GIANT BOWL for next to nothing.)

 You might remember learning all about Citrus Fruits from my post a while back. I’m a huge fan of citrus and we always have a steady supply of lemons and limes on hand. They come in handy for salads, smoothies, dressings, tacos, soups, and to squeeze into water. And now, those limes can be used for delicious popcorn!

 Before we get to the recipe, I think it’s important to talk about corn for a minute. Corn is one of the biggest crops grown in the US (alongside soy, cotton, and tobacco) and is also one of the most genetically modified crops grown. For me, it is a personal choice to ONLY eat organic, non-GMO corn. I would encourage you to do the same, but, of course, do what’s best for you. (If you haven’t seen it already, I would recommend watching King Corn.) For this recipe, I chose to use organic, non-GMO corn kernels to make my popcorn.

 Since this recipe is vegan, there is no butter and no cheese, but I promise you won’t miss it. This recipe is packed with delicious ingredients like nutritional yeast that will give that cheezy flavor you’re hoping for with the benefit of adding some amazing nutrients like vitamin B12 to your snack!

Vegan Cheezy Lime Popcorn

Ingredients

 ½ c popcorn kernels
3 TBSP coconut oil, divided
Zest of one organic lime
3 TBSP nutritional yeast
Salt

Directions

 To make popcorn on the stovetop, add 1 TBSP of coconut oil to a large pot with a lid. Place over medium-high heat on the stove to heat oil. Drop a single kernel of corn into the pot to check temperature - when ready, the pan will sizzle. Add remaining kernels and the lid to the pot. Shake over heat until all kernels are popped. Remove from heat and place popcorn into a large bowl.

 Add 2 TBSP coconut oil, lime zest, salt, and nutritional yeast to the bowl and toss or stir quickly to coat.
