Apple Pie Smoothie

Move over, pumpkins. Apple season is here!

You might be thinking, “Why did you wait so long to give this to me? Apple season starts in September!” It hardly feels like fall when it’s 100 degrees out and I’ve been rocking green smoothies for the past two months. Lucky for you, it’s cooling off here in LA and I’m ready to snuggle in for some apple goodness. Pumpkin is good (I love these Pumpkin Spiced Breakfast Bars), but nothing beats a delicious, crispy apple!

This smoothie is inspired by traditional apple pie with its grounding spices and delicious sweetness. However, unlike apple pie, this smoothie is not packed with enough sugar to send you into a glycemic frenzy. The sweetness only comes from apples and we’re leaving the skin on to retain the fiber. This way, the sugar enters your bloodstream more slowly. We’re also balancing the sugar from the apples with spices, oats, and even a sneaky vegetable!

This smoothie is great for breakfast or an afternoon snack. It’s really easy to throw together and I feel pretty confident saying that kids will like it, too (though I have not actually asked a child to taste it...yet. Please report back if you do!).

Apple Pie Smoothie
Serves 1

Ingredients

½ an apple, core removed
1 small zucchini, peeled and cut into chunks
1 TBSP rolled oats
¼ tsp cinnamon
⅛ tsp nutmeg
¼ tsp vanilla
½-¾ c nut milk of choice (I used almond. Using less milk will make it a little thicker.)
4-5 ice cubes

 

Directions

Add all ingredients to a blender and blend until smooth. Pour into your favorite glass and sip through a glass straw or store in a mason jar for an on-the-go snack.
