Strawberry Banana Chia Pudding

Strawberry season is in full swing in California and it’s my favorite! I can’t get enough of those juicy, sweet, jewels!

If you’re a strawberry lover, like me, you’re going to love this simple, delicious strawberry banana chia pudding. It’s got everything you’re looking for in a breakfast-- it’s full of fiber, protein, good fats, and delicious berries. And a little raw cacao powder thrown in for good measure (chocolate never hurts, right?)

If you’ve made chia pudding, you know how easy it is to whip up. Simply add whole chia seeds to your favorite nut milk, stir, and set in the refrigerator overnight. Voila! The addition of a strawberry banana smoothie on top takes this to a whole new level.

When looking for strawberries, look for local and organic berries. Strawberries are on the Dirty Dozen list, meaning conventionally grown berries are covered in pesticides. Best to choose organic whenever possible to reap the most benefits in your berries. Strawberries are a great source of Vitamin C and manganese and can help your body improve heart health and lower blood pressure.

While I often hear people worry about bananas (“they are so sweet, they must be bad for you!”) you might be happy to know that bananas are a great fruit to consume. They are really low on the Glycemic Index, meaning that they have a very low impact on your blood sugar. They are also a very good source of Vitamin B6, which helps to convert food into energy in your body and helps your body to metabolize fats and proteins more efficiently, thus explaining why bananas are such a go-to choice for athletes.

Let’s get to the kitchen, shall we? This recipe will make two servings, so share with someone you love or half it to make a single serving. Strawberry Banana Chia Pudding is easy enough for a weekday breakfast and decadent enough for a Sunday brunch. I hope you enjoy it as much as I do!


Strawberry Banana Chia Pudding
Serves 2


For the Chia Pudding Layer

2.5 TBSP whole chia seeds
⅔ c non-dairy milk

For the Strawberry Banana Layer

1 banana
3 strawberries
1 tsp raw cacao
¾-1 c non-dairy milk (depending on whether you want it a little thicker or thinner)
Splash of vanilla (optional)



For Chia Pudding Layer: Mix chia seeds and milk together in a container. Set in refrigerator overnight. In the morning, stir well to incorporate and then divide into two bowls.

For Strawberry Banana Layer: Add banana, strawberries, raw cacao, non-dairy milk, and vanilla (if using) into a blender and blend until smooth. Pour on top of your bowl of chia pudding. Garnish with fresh cut strawberries if desired.
