Watermelon Strawberry Mint Spritzer

Watermelon is a nice treat on a hot day-- stored in the refrigerator it will cool you down in the sweltering heat (hello, heat wave!). It’s almost universally liked by kids and adults, making it an easy snack to have around the house. 

Today, I want to show you another way to use this amazing summer bounty-- as a beverage! We all know we should be drinking tons of water, and generally speaking, I’m pretty good about that. However, sometimes we need a little hydration boost-- something that makes us WANT to sip on something hydrating and refreshing. 

Combining watermelon, strawberries, mint, and lime we’ll make a juice base that can then be lightened up by adding plain seltzer water and some ice. Voila-- your fancy summer beverage is served! 

This is perfect for a family gathering, sitting poolside with your friends, or a Tuesday. It’s really easy to throw together, but it looks like it took a lot of effort! 

You could make this in a juicer if you have one. I used a blender and it came out perfect. You could also use a food processor if you don’t have a blender, you may need to strain it. 

Note: You absolutely COULD drink this without adding seltzer. If you are going to do this, you may want to double the recipe so you have plenty to go around! I prefer it with the seltzer to lighten it up, but the choice is yours!

Watermelon Strawberry Mint Spritzer
Makes about 2 cups of juice

½ mini watermelon, rind removed 
6-8 strawberries (about a cup), washed (keep the tops on!)
1 TBSP fresh mint leaves
½ lime, rind removed 

Add all ingredients to your high powered blender. Blend until it’s a liquid (you may need to push the pieces down in your blender a bit to get this started). 

Optional: Strain your juice through a nut milk bag. You do not have to as there isn’t much pulp left behind, but you can if you don’t want any pulp at all. 

To Serve: Add ice to a glass. Fill halfway with watermelon juice and top off with your favorite plain seltzer. Add a sprig of mint or a slice of lime for garnish and enjoy!
